Best Pepper Keto Chicken Casserole


Chicken Casserole with Pickled Chili, Mozzarella & Pepper Jack – This crazy delicious baked keto chicken casserole is so quick and easy to make. You’ll love the spicy flavors of juicy oven-baked chicken breasts topped with mozzarella, pepper jack, and pepper slices. Serve with steamed cauliflower rice and you get a perfect keto / low carb dinner fresh out of the oven in less than 30mn. Enjoy!

INGREDIENTS LIST FOR THE PEPPER KETO CHICKEN CASSEROLE.

  • 4 medium keto chicken breasts (2 large chicken breasts, cut lengthwise)
  • 2 teaspoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon each salt and pepper
  • 1 cup pickled pepper rings
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded pepper jack
Finely chopped parsley.

DIRECTIONS:

1. Preheat oven to 400ºF (200ºC). Lightly grease a 9×13 baking dish with oil or cooking spray.
2. Arrange the keto chicken breasts in the baking dish drizzle with olive oil and season chicken breasts on both sides with salt, paprika, pepper, garlic powder, oregano, and Italian seasoning.
3. Place marinated chile pepper slices over each chicken breast. Sprinkle generously with mozzarella and pepper jack cheese.
4. Bake for 18 to 20 minutes, or until keto chicken’s internal temperature reaches 165ºF (74ºC) and cheese is bubbly and golden. Remove the chicken casserole from the oven, garnish with freshly chopped parsley and serve immediately with cauliflower rice on the side. Enjoy!

Notes:

Go easy on the salt since cheese and pickled peppers are already salty.
You can also serve the baked keto chicken casserole with zucchini noodles, or rice or pasta if you’re not on a low-carb/keto diet.
